Domestication and spread

Maize was domesticated from the wild grass teosinte (Zea mays ssp. parviglumis) in the Balsas River valley of southwestern Mexico around 9,000 years ago.2 The earliest archaeological evidence, including microfossils from the Xihuatoxtla shelter, dates to about 8,700 years ago. Genetic studies show that a small number of mutations, such as in the tb1 gene controlling plant architecture, were key to transforming teosinte's many branches and tiny ears into the single-stalked, large-eared crop. From its origin, maize spread rapidly through the Americas, reaching the southwestern United States by 4,000 years ago and the eastern woodlands by 2,000 years ago. After 1492, European explorers carried it to Europe, Africa, and Asia, where it became a major crop in many regions, particularly in sub-Saharan Africa and China.

Biological and genetic diversity

Maize is a tall annual grass with a unique reproductive structure: separate male (tassel) and female (ear) inflorescences on the same plant, facilitating cross-pollination by wind. This outcrossing has generated remarkable genetic diversity, with tens of thousands of landraces adapted to diverse climates, from tropical lowlands to high-altitude Andean valleys. The maize genome, sequenced in 2009, comprises about 2.3 billion base pairs and 32,000 genes, with a high degree of structural variation, including copy-number variants and transposable elements that contribute to phenotypic plasticity.3 This diversity underpins its use as a model organism for genetics; Barbara McClintock's discovery of transposons in maize earned her the 1983 Nobel Prize. Uses and global importance

Maize is a versatile crop used for human consumption, animal feed, and industrial products. In human diets, it is consumed as whole kernels, flour, and processed into products like tortillas, porridge, and snacks; nixtamalization, an alkaline treatment, improves its nutritional value by releasing niacin. As feed, maize accounts for a large share of livestock rations, particularly for poultry and pigs. Industrially, maize is processed into starch, sweeteners (high-fructose corn syrup), ethanol, and bioplastics. The United States is the largest producer, followed by China and Brazil, with about 40% of global production used for biofuel. Maize is also a staple in many developing countries, where it provides over 20% of daily calories in parts of Africa and Latin America. Its economic importance is reflected in global trade, with the United States, Argentina, and Ukraine being major exporters.

Lesser-known aspects

Beyond its common uses, maize has several niche and surprising dimensions. The chapalote landrace, one of the oldest, is still grown in Mexico and has a distinctive smoky flavor. Maize is also used in traditional medicine, such as corn silk tea for urinary ailments, though evidence is limited. In archaeology, maize played a role in the rise of complex societies; isotopic analysis of human bones reveals when maize became a dietary staple in the Americas. A lesser-known fact is that maize is a C4 plant, which makes it highly efficient in water and nitrogen use, a trait that has inspired research into improving other crops. Additionally, the popcorn variety has a unique endosperm structure that causes it to explode when heated, a phenomenon studied in food science. Maize has also been used in space agriculture experiments, as it is a candidate for life support systems due to its high biomass yield.
