Green tea

Green tea is a beverage made from unoxidized leaves of Camellia sinensis. Unlike black tea, its leaves are rapidly heated after harvesting to inhibit enzymes that darken the leaf, preserving a greener color and a fresher, more vegetal flavor profile.1

Production and definition

Green tea is defined chiefly by the early deactivation of leaf enzymes that would otherwise promote oxidation. Fresh leaves are withered briefly and then heated by pan-firing, steaming, roasting, or related methods; they are subsequently rolled, shaped, and dried. The treatment preserves much of the leaf’s original green color and produces a chemical profile distinct from that of black tea.1

All true tea comes from Camellia sinensis, although cultivar, growing conditions, harvest season, and processing create substantial differences. Chinese teas commonly include pan-fired styles, while Japanese production is strongly associated with steaming. Matcha is an unusual form in which shade-grown leaves are processed into tencha and ground into a powder that is consumed in suspension rather than infused and discarded.2

Chemistry, flavor, and preparation

Green tea’s characteristic bitterness and astringency arise largely from polyphenols called catechins, especially epigallocatechin gallate, while amino acids such as theanine contribute savory and rounded notes. Caffeine is also present, but the amount in a cup varies with leaf quantity, water temperature, infusion time, and product type.

Brewing cooler water for a shorter time generally yields a milder infusion; hotter or longer brewing extracts more caffeine, catechins, and bitterness. Powdered products such as matcha deliver constituents from the entire leaf, whereas ordinary infusion leaves most insoluble material behind. Green tea is also used in culinary preparations, including sweets, noodles, broths, and the Japanese tea ceremony.

Health research and safety

Research has examined green tea and its catechins in relation to cardiovascular risk, body weight, cancer, glucose regulation, and cognitive function, but evidence differs by outcome and is generally stronger for modest associations than for dramatic preventive or therapeutic effects. Tea should not be treated as a substitute for established medical care.

Brewed green tea is usually well tolerated, although its caffeine may cause sleep disturbance or other stimulant effects in sensitive people. Concentrated green-tea extracts are different from beverages: rare cases of liver injury have been reported, and supplements can expose users to much higher doses of catechins. The European Food Safety Authority identified particular safety concerns for supplements providing high amounts of epigallocatechin gallate, especially when taken fasting.3 Tea can also reduce absorption of non-heme iron when consumed with meals, a consideration for people vulnerable to iron deficiency.4

Lesser-known aspects

Green tea is not a single flavor category: shaded teas such as gyokuro and kabusecha develop different balances of theanine and vegetal flavor, while roasted Japanese hojicha is made from tea leaves but has a toasted profile and typically less caffeine than many standard green teas. Kukicha uses stems and twigs as well as leaf material, illustrating how tea manufacture extends beyond the familiar leaf-only product.

The beverage’s history is tied to both Chinese tea culture and later Japanese institutions, where powdered tea became central to chanoyu. Modern scientific terminology can obscure this diversity: “green tea” describes a processing class, not one cultivar, region, grade, or preparation method. Decaffeinated products still contain small residual amounts of caffeine, and bottled drinks may contain added sugar or substantially less tea solids than freshly brewed tea. These distinctions matter when comparing nutrition, flavor, and research findings.
