Decoction mashing involves removing a thick portion of the mash—usually 20–40%—and boiling it in a separate kettle, then returning it to the main mash to raise the temperature to the next saccharification rest. The number of decoctions defines the method: single, double, or triple decoction, corresponding to one, two, or three boiling steps. Each decoction typically targets a specific temperature rest, such as protein rest (50–55°C), saccharification (62–68°C), and mash-out (72–75°C). The boiling of the grain portion extracts additional starches and melanoidins, which are then mixed back, increasing the wort's fermentability and complexity.

Historical and regional significance

Decoction mashing developed in the 19th century in Bavaria and Bohemia, where direct-fired kettles made it easier to boil a portion than to heat the entire mash evenly.1 It became the standard for Pilsner and Munich-style lagers, prized for the rich, malty profile it imparts. With the advent of modern steam-heated mash tuns and temperature-controlled infusion mashing, many breweries abandoned decoction for efficiency, but traditionalists and craft brewers continue to use it for authenticity. The Reinheitsgebot, the German beer purity law, does not mandate decoction, but it is often associated with traditional German brewing practice.

Effects on beer quality

Boiling a portion of the mash promotes Maillard reactions, producing melanoidins that contribute to a deeper color, fuller mouthfeel, and a more pronounced malt aroma.2 It also increases the extraction of polyphenols and can enhance foam stability. However, decoction can also lead to higher levels of dimethyl sulfide precursors, which may require a longer boil to mitigate. Some studies suggest that decoction mashing can slightly increase the attenuation and alcohol yield, though the effect is modest compared to infusion mashing.

Lesser-known aspects

Decoction mashing is not limited to lagers; some Belgian and sour beer brewers use it to produce complex grists. A variant called "decoction of the thin part" (Dünnmaische) involves boiling the liquid portion rather than the grain, which is less common but used in some wheat beers.3 The method also has a historical link to the development of the first temperature-controlled mash tuns, as brewers sought to replicate decoction results without the labor.
